Tabbouleh – Lebanese Style
The healthiest lunch alternative in a modern cuisine. Period.
From a scientific perspective, all ingredients are already broken down so your body doesn’t have to do the hard work to digest the food.
INGREDIENTS
- 3 bunches of parsley, finely shredded
- 1 and a half bunches of fresh mint, finely chopped
- 3 large ripe beef tomatoes, seeded and cut into small dices
- 1 firm cucumber, seeded and finely chopped
- 3 lemons, peeled, skinned and finely chopped
- 3 to 4 tablespoons of extra virgin olive oil
- 50gr of fine Bulgur, soaked in hot water
- Salt and pepper to taste
STEPS.
Step 1 – Get your ingredients together
Step 2 -Peel the lemon into segments and dice. Try to keep the juice of the lemon while doing this, you’ll need it for the dressing. Finely chop the tomatoes, cucumber and herbs. Soak the bulgar wheat in hot boiling water until soft. Drain and keep cool.
Step 3 – Mix all of the ingredients in a large bowl and season with the extra virgin olive oil and juice of the lemon.
Step 4 – Season with salt and pepper
Step 5 – Serve with warm pitta bread and hummus.

What an elegant and simple idea! And, maybe I’m crazy, but this seems like the perfect snack to take to the movies, especially if some dark chocolate and sea salt were added. 🙂
